Servings: 6 to 8 servings
Ingredients: 2 sweet potatoes or yams (peeled and cut into equal size pieces)
7 granny smith apples cored and cut into slices
2 tablespoons Clarified grass-fed butter or palm oil
1 tablespoon ground Cinnamon
½ teaspoon ground Nutmeg
¼ cup of Coconut crystals or organic brown sugar
Salt and Pepper to taste
Instructions: – In a 2 quart pot add 1 quart of water and ½ teaspoon of salt. Bring the water to a boil.
– Add the potatoes pieces to the water and boil until they become fork tender*.
– Strain the potatoes in a strainer and let rest.
– Sauté the apple slices in the clarified butter until they become fork tender.
– Add ground cinnamon and nutmeg to the sautéed apples.
– Place the potatoes and apple slices into a bowl. Add salt, pepper, and coconut crystals to the apple mixture and coat well.
– Place the mixture into a 2 quart baking dish and bake for 30 minutes at 375° F. Let rest for 5 minutes before serving.
Notes: *Fork tender is when a fork can easily be inserted and removed from a cooked food.

I made the dish with the intent of it being a side dish, however you can make it whatever type of dish you want. All my recipes can be easily changeable. 🙂

Great flavor but sauté of apples prior to baking made them overcook, unless I goofed. I microwaved the sweet potatoes whole after poking several times which is my preferred way of preparing them; only takes a few minutes. After removing the skins they were perfect for tossing with the apple/spice mixture. Great recipe and so quick to make! Thanks!

What temperature do you bake it at? I didn’t see it in the recipe and I am no good at guessing things like that. Thanks:)
