Servings: 6-8
Ingredients:
1 lb grass-fed beef liver
1 lb Spicy Italian sausage
1 lb grass fed ground beef
2 Tbsp olive oil
1 Tbs bacon fat
1 medium onion diced
2 stalks celery diced
2 cloves garlic
3 cans diced fire roasted tomatoes
1 can tomato paste
1 can green chilis
1 C chicken broth
2 Tbs cumin
1 Tbs chili powder
Cayenne pepper to taste
Salt and pepper to taste
Instructions: Place liver in food processor and process until finely chopped. Set aside.
Add oil and bacon fat to pan. Add diced onion, celery and garlic to pan. Saute 3 minutes until fragrant.
Add sausage, ground beef, liver, salt and pepper to pan. Cook through then add tomato paste, tomatoes, chilis, chicken broth and spices.
Simmer for 15 minutes then enjoy!!
Notes: This is the best way to hide liver in a meal! My family (5 year-old, 7 year-old and hubby) LOVES this chili. I serve it over cauli-rice. Hope you like it as much as we do!
