Ingredients: Crust:
1 1/2 cups almond meal
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 cup virgin coconut oil
2 tablespoons pure maple syrup
1 teaspoon vanilla extract
Filling;
3 over ripe avocado
3 tablespoon cocoa powder
3 tablespoon honey
1 tablespoon gelatin(usually one packet)
1/2 cup water
1 teaspoon vanilla extract
Topping:
2 cans coconut milk (full fat)
1 tablespoon honey
1 teaspoon vanilla
Instructions: Place your 2 cans of coconut milk into the fridge, its a good idea to do this the night before you plan on making the pie
Crust:
*Preheat oven to 325
*In a bowl, combine 1 1/2 cup almond meal, 1 teaspoon salt and 1 teaspoon baking soda
*In another bowl mix 2 tablespoon maple syrup, 1 teaspoon vanilla and 1/4 cup coconut oil (make sure to melt the coconut oil)
*Mix wet into the dry
*Shape the dough into a 9 inch pie pan. Try to make the dough as smooth and even as possible.
*Bake for 10-15 minutes
*Set aside to cool
Filling:
*Place the avocado meat into a food processor
*Add 3 tablespoons cocoa to food processor
*Blend until smooth
*In a sauce pan, pour in 1/2 cup water and add 1 tablespoon of gelatin, stir until combined
*Add 3 tablespoon of honey to the water gelatin mix, stir until combined
*Place gelatin mixture on stove top and set to med-high to high, stir constantly until it reaches a boil. Remove from heat as soon as boil is achieved
*Turn your food processor to its lowest setting and slowly add the gelatin mixture to the avocado/chocolate badder
*Once completely added, pour in 1 teaspoon vanilla, mix until everything is completely combined
*Pour badder into cooled pie crust and set in the fridge until cooled and completely set up
Topping (inspired by a recipe from marksdailyapple.com)
*Remove 2 chilled coconut milk cans from the fridge
*Remove the solid top layer from the cans and place into a bowl (you could strain the cans with a colander to capture all of the solid, just make sure you don’t get any of the liquid mixed in with the solid)
*Add 1 tablespoon of honey and 1 teaspoon of vanilla to the solid coconut milk
*With an electric hand mixer blend until you achieve the texture of whipped cream (usually takes 5-7 minutes)
*Add whipped coconut cream to the top of the chilled pie
Set completed pie into the fridge until ready to serve
