Ingredients:
1.) Olive oil, bacon grease, lard or tallow
2.) 3 large organic potatoes
4.) 1 lb any type of mushroom (wild are best for flavor)
5.) 1 medium onion
6.) Few cloves or garlic
7.) Salt
8.) Pepper
9.) All purpose seasoning blend (I used TJ 21 spice mix)
Instructions:
1.) Heat up a large skillet with cooking grease of choice
2.) Add chopped up garlic and onion, cook until golden brown
3.) Chop up potatoes and mushroom (strips or how ever you prefer)
4.) Add potatoes and mushrooms to the skillet and mix to combine with the onion and the garlic
5.) Season well with salt, pepper and all purpose seasoning blend of choice
6.) Fry on medium to low heat to get a nice crust on the bottom of the pan, then give a mix
7.) Cover and cook for about 10-15 on low heat to cook the potatoes and the mushrooms throughout
8.) Uncover and cook some more on medium heat to get the crust on the potatoes that are on the bottom of the pan
9.) Mix again, taste and keep cooking on low heat if the potatoes are not yet tender (cooking time will depend on the cut of the potatoes)
Serve as a side or by itself.
-Potato and mushroom ratio can vary as desired (1 potato and a lot of mushrooms for a low carb. version)
-Optional: to serve, drizzle with good olive oil or a side of sour cream if dairy is tolerated
