Servings: 6-8
Ingredients:
1onion
2# pork, beef or game meat cubes
1teaspoon cumin
3 cloves crashed garlic
15 green chilies roasted, peeled, seeded, chopped OR 1 28 oz can chopped green chilies
1teaspoon salt
1.5 cups bone broth
Instructions: Chop the onion and brown it in lard or coconut oil for 4-5 minutes. Add meat cubes to onion and brown meat until no pink is visible. Place onion/meat mixture in a 4 qt. ( medium) slow cooker along with remaining ingredients. Cook on low 6-8 hours. If too thin, cook with lid open the last 1-2 hours .
Notes: This is a versatile recipe…..I have used elk, deer, moose, javelina and all are delicious. The chili can be served with any number of toppings….cilantro, chopped black olives, avocado slices, tomatoes, diced red onions, a variety of chopped peppers, lime wedges, whatever whets your appetite or is in your refrigerator/ garden.
