Ingredients: 6 plump dates
1 heaping Tbsp raw cashews
1 cup unsweetened almond milk
½ cup coconut milk (the kind from a can… be sure to shake it up first!)
½ tsp pure vanilla extract
½ tsp cinnamon
¼ tsp nutmeg
1.5 oz spiced rum (i.e. “Captain Morgan’s”) or rum extract to taste for virgin nog
Instructions: Place dates and cashews in a small bowl. Add enough hot water to just cover the dates and nuts. Let soak for 5-10 minutes to soften the dates and nuts (this will make them easier to blend).
Add date/nut/water mixture to blender along with the rest of the ingredients. Blend on HIGH SPEED for 2 minutes. You want the nog to be smooth and creamy with no “chunks” of dates or nuts present.
Pour into 2 glasses and refrigerate for at least an hour to allow flavors to blend. If you like your eggnog sweeter, stir in a touch of honey or agave before serving.
Notes: Although I’m an egg-lover, I can’t stand the idea of eggs in a beverage. This nog is egg free, dairy free, and refined sugar free.
