Ingredients:
Noble Fir Sorbet:
1 c. of sugar
1 c. of water
2 6-inch branches of noble fir (cut into 1-inch lenghts)
1/2 c. of mineral water
1/2 c. of fresh squeezed lemon juice
1 Tbsp. of gin or vodka
Cocktail:
Noble Fir Sorbet
Mezcal (such as Sombra Mezcal)
Instructions:
Smoked Noble:
1 scoop of Noble Fir Sorbet (size 20 – large cookie scoop)
1.5-2 ounces of Mezcal
Chill a cocktail glass. Place a beautifully rounded scoop of sorbet at the bottom of the glass. Place Mezcal in a shaker with ice. Shake and pour over sorbet. Garnish with a piece from a noble fir branch. Or skip the garnishing and just enjoy the noble fir infused sorbet and smokey mezcal.
Noble Fir Sorbet:
In a saucepan, bring to a boil 1 c. of water, 1 c. of sugar and douglas fir branches and simmer for 10 minutes. Strain and cool.
Add mineral water, lemon juice and alcohol (the alcohol will give the sorbet a smoother and less grainy texture).
Churn as directed in your ice cream maker.
Notes: For a manly version:
Make the infused simple syrup of 1 c. sugar, 1 c. water and the douglas fir.
1 oz. douglas fir infused simple syrup
1 oz. fresh lemon juice
1 1/2 oz. of bourbon
Pour into a lowball on the rocks.
