Servings: 6-8
Ingredients:
2 – 4-6lb Turkey Breasts with Skin On
2 – Twigs Fresh Rosemary
1 – Cup Fresh Basil
1/2 – Cup Fresh Taragon
1 – Tbsp Sea Salt
1 – Tbsp Black Pepper
4-5 Slices of Cooked Bacon
2-3 Tbsp Olive Oil
Instructions:
1.) Preheat Oven to 325 degrees
2.) Take thawed turkey at room temperature and pat dry
3.) Apply oil to the skin
4.) Place Rosemary, Basil, Taragon, Salt, Pepper, and Bacon in a Food Processor and pulse until ground
5.) Take 2/3 of the mixture and apply directly to skin and under skin
6.) Mix remain mixture with pan drippings and olive oil (after it has cooked for an hour)
7.) Place Turkey in oven with meat thermometer for 1 hour
8.) At 1 hour, baste and glaze Turkey with herb, oil, and dripping mixture
9.) Cook for additional hour or until meat thermometer reads 165 degrees
10.) Let rest for 15 minutes covered in foil

Notes: You can have your local butcher or fine establishments like Whole Foods provide skin-on turkey breast. Be sure to thoroughly thaw and dry Turkey before baking.
