Servings: 6-8 servings depending on how hungry family is
Ingredients:
700 g pork
700 g veal
600 g chicken
150 g lard
400 g black pudding
2 pcs. pickled cabbage
dry red chillies
red wine
dough for the lid (only for sealing the pot – dough, wheat, grains are “venomous poison”)
Instructions: At the bottom of the croc pot (made of earth named guyvech here in Bulgaria) put 3-4 pickled cabbage leaves. On top put stuffed cabbage leaves made with pieces of pork and veal. Cover with a layer of chopped pickled cabbage. Sprinkle with paprika and some lard pieces. On top put the chopped veal, another layer of chopped pickled cabbage, red pepper and lard. Then put pork, layer pickled cabbage, chicken, layer pickled cabbage and the dry red chillies. Put pudding on top, cut into large pieces. Place the wine and water to the middle of the pot. Close with a lid and seal with the dough. Place in oven and cook on medium heat 3 hours. In the beginning it must go on high heat to boil and then reduce.
Notes: It´s one of the most famous Bulgarian Christmas recipes. My family loves it. This year it will be part of our traditional Christmas lunch with good red wine! And of course, i´m waiting for some good ideas for desserts and side dishes to try something new.
