I did the webinar (hate I couldn’t have been there in person and missed the paleo barbecue they had afterward, but alas, Canada is a long way from here). They did a good job with the webinar, we even got to ask questions online (I got Mat spun up a couple of times haha) There was a TON of good info, he backed up everything with studies, had great slides and diagrams that really helped you visualize and understand this stuff, and you get copies of all the slides, which are practically invaluable (I’ve got some studying to do). I really couldn’t recommend it enough, and think it should be a requirement for anyone going into anything related to nutrition. Big thanks to Mat and everyone who put the seminar/webinar on (and to you Robb for introducing me to it).

An off topic question for this post, but I need your feedback on something…
Prof. Cordain’s most recent Paleo Newsletter contained the first part of a paper he has published on nightshades. In it he discussed potatoes. From his and your past writings on this topic I thought I was sort of caught-up on the topic. However, Prof. Cordain makes not distinction between different types of potatoes in his paper.
My question is, are potatoes with color (i.e. sweet potatoes, purple potatoes, etc) less toxic and safer to eat than white/gold potatoes? Or should I just be avoided potatoes all together? I’ve really come to love my sweet potato fries.

Yea, not in the same families at all (sweet potatoes). Many of the purples are in that nightshade family.

I was very impressed with this seminar, Mathieu had a vast amount of useful information and hard facts to back what he was teaching. The cost was minimal for such a great seminar, it’s a shame it was only one day. It is also very nice the power point notes from this seminar will be sent to each student as it lets them (and I) listen more intently instead of trying to take notes.

It was awesome. I am in Australia and was watching from 10.30pm to 6.30am, and i got most of it! The only downfall was that my 5 month daughter decided to wake up 3 times and I had to settle her so missed a good chunk there, but in the end my head just hit the desk! I was weak and couldn’t stay awake any more so I missed the whole bit around fermented and your recommendations, and that was the part I really wanted to hear the most.
I hold a bachelor in health and nutrition and when I look back, I wish I had done your seminar for the first semester instead of the classes. I work with people everyday, trying to get them to change around, or at least TRYING to do something different. So now that I know all of the evidence it makes it more legit (another Robb wolf word!!!).

Question, I am actually Danish but living in Australia, and recently saw the Norwegians have made some new recommendations regarding the intake of meat. They came to the conclusion that we should limit the amount of red meat to no more than 500g a week – (that is my breakfast!!!) due the risk of colon cancers. They did specify the processed meats were particularly to blame, so sausages, bacon, ham – but no one word mentioned about if you changed to free range grass fed meats! There was no limitation of chicken and fish and the whole story got support from Walter Willet.
Have any of guys read any supportive research of the cancer link or do you have any thoughts?

Oh and another thing…. fish oil – how much! You guys seems to have some different views!
I get the idea of it depends more on how bad your status/balance is between 3 & 6 but how do we determine that, other than looking at them, their food habits and their performance levels.
most of the studies I have found is looking at it from one aspect only, the level of omega 3 but not in conjunction with what else is going on (grains, veg. oil).
So I guess my question is if it would possible to come up with some sort of question line, of which the answers would give you some sort of recommendation like the whole9 calculator that BOTH of you guys can agree on!

Matt Lalonde is THE MAN. He was willing to talk to me for basically an hour after the seminar, and helped me address everything from acne to weight loss in my family to deloading on linear progression. I would love to write a kick-ass testimonial but I understand that the ones displayed on the site here are from people with actual credentials. I’m just a college student.

I was also wondering if you could comment on something. I read Food and Western Disease by Staffan Lindeberg and he cites some studies on fructose and the conclusion he comes to is that fructose is only problematic in excess of 60g/day and that unless one eats only fruit they won’t exceed that limit. His recomendation is don’t worry about how much fruit you eat because it has lot’s of vitamins and nutrients and phytochemicals and it is highly unlikely that one would exceed the safe limit. I agree. Completely awesome! A ton of great info, and Mat did an excellent job breaking it all down and getting into the details. The slide presentation was excellent as well and is practically worth the price of admission to the webinar alone. Though the extra detail and explination Mat added took it to another level.
I cannot recommend attending both Robb’s PSS and now Mat’s Nutrition Seminar enough! The passion you both have for your work and the way you present your material is awesome! And you get help so many people in the process.

The whole meat and cancer thing is epidemiological. There are a few flawed animal studies like the ones Campbell likes to cite as support for his hypothesis (i.e. rats fed casein get more cancer than rats fed soy protein. what Campbell doesn’t say is that weigh protein was found to protect rats from cancer. Cherry picking evidence anyone?). I wouldn’t worry about this, especially if your meat comes from grass-fed or pastured animals.

No, I’m not of a mind to give away a certification that someone simply attended the seminar. Within a year we will have a university accredited program that MEANS something and demonstrates your competence in the subject matter. In the mean time this seminar seems to be well received by folks trying to understand both the science and application behind paleo nutrition as it relates to performance, health and longevity.

I’m not looking for what can be tolerated. I’m looking for optimal nutrition. I find it funny that all of that literature admits that health problems occur when one consumes >50 grams of fructose per day and that people have no problems with “OK so I guess we can consume 50 grams per day”. Consider the fact that there is no such thing as an essential carbohydrate, your body can manufacture glucose from glucogenic amino acids as well as from glycerol. Also consider that glucose is far less problematic because it can be used by any cell in your body. That means a lot less will hit the liver.
Here are the questions I would need answers to in order to determine how much fructose someone could tolerate:
What is the percentage of carbohydrate in the diet? What is the individuals genetic make up? Is the individual athletic or sedentary? What kind of exercise regimen does the individual follow; high-volume low-intensity or high-intensity low-volume? Or both? Where is the fructose coming from? Fruits contain fiber, which slows down and limits the absorption of sugars. This is not the case with sucrose, agave or HFCS (essentially pre-digested sucrose). Is the individual stressed and how much sleep do they get? Is the individual suffering from some aspect of metabolic syndrome? Does the individual consume alcohol? How often? What is the individuals gut health?
I would rather tell people to avoid it as much as possible. You can and will live a healthy life without fructose so why take the risk? I have no problem with using fructose to gain an advantage during athletic endeavors but I can’t recommend large quantities of it for life long consumption.

When we eat excess carbs, they get stored as palmitic acid in our fat tissue, right?
In what form then does fat get stored if we just over-eat dietary fat? (SFA – palmitic, stearic etc, MUFA, PUFA?) Is there a pattern to this corresponding to dietary intake?
In other words, does the fatty acid composition of our fat tissue change with how the fat was “sourced”? (Internally through carbs- >palmitic acid, or from the diet.)

Great question. Yes, our tissue fat changes dramatically in response to dietary fat. This was some of my early work looking at the fatty acid profile of red blood cells and using that information in correlative studies. So, dietary fat is a triglyceride (glycerol+3 fatty acids) Those FA’s can vary in composition. So, dietary fats and as you pointed out, carbohydrate conversion to palmitic acid can influence our systemic FA profile. Our bodies can modify this pool to some degree with saturase, desaturase, and elongase enzymes which can change the length or saturation of fats. Many thing influence this scenario including cold weather and hormonal status.

What a fantastic resource Mat has provided us with, I think the whole webcast thing would benefit from a bump for newer members to the paleo scene who aren’t aware that it exists and it is extremely worthwhile.
