Servings: 30 cookies
Ingredients:
1 cup almonds
1 cup walnuts
10 large medjool dates, pitted
2 pinches salt
1/4 – 1/2 tsp peppermint extract
1 1/2 tsp vanilla
1 tsp cinnamon
1/2 cup shredded coconut
3 Tbsp cacao powder
1/2 – 1 Tbsp honey
Instructions: In the food processor, process nuts to powder. Add dates & blend until sticky. Add the remaining ingredients & blend.
Taste. Adjust sweetness & peppermint to your liking.
Using your hands, roll into balls, then roll in cinnamon, shredded coconut, or cacao nibs. Store in refrigerator or freezer for freshness, but they won’t last long:)
Optional: For an easier option, push into an 8×8 dish. Place in freezer for 30 minutes & cut into squares. You can top with cinnamon, shredded coconut, or cacao nibs (or all 3).
Notes: These never last long around my house:)
