Servings: Serves 8 as a dessert
Ingredients: (1) 15oz. can organic pumpkin purée
½ cup Tap n’Apple apple butter
1 cup coconut flour
1 ½ cups pecan pieces
¼ cup arrowroot powder
8 jumbo cage-free eggs, room temp.
2 tsp. pumpkin pie spices
2 tsp. Vietnamese ground cinnamon
2 large pinches sea salt
3 – 4 tbsp. warm water, approx.
Sliced bananas and strawberries
Warm coconut manna + raw honey to taste
Instructions: Pre-heat the oven to 200° F.
If you are seriously trying to avoid dairy, legumes or gluten, wash the pecans well in warm water to get rid of allergens in case the nuts were processed in a plant that handles milk, soy, peanuts or wheat.
Drain the pecans and place them on a baking tray. Roast the nuts in the preheated oven on the middle rack until they are dry and golden brown, about 15 to 20 minutes.
Whisk all the other ingredients (except the manna and fresh fruit) in a large mixing bowl, adding the water last about a tablespoon at a time until the batter is thick but spreadable. Stir in the cooled pecans.
Spoon then swirl several tablespoons of batter onto a pre¬-heated skillet or griddle greased with coconut oil and fry over medium-low heat until set on one side about 6 – 8 minutes.
Flip gently and brown the other side about 2 minutes more and keep warm in the oven, covered with a damp kitchen towel. Use two fry pans on two burners if you’d like to speed things up since it does take some time to cook these pancakes all the way through without burning them…
Warm the 8 dessert plates in the oven as well and when you are ready to serve stack one or two pancakes on a plate, add a dollop of coconut manna that has been lightly sweetened with raw honey (or pure maple syrup if you prefer).
Sprinkle the pancakes all over with extra Vietnamese cinnamon (ground cassia from Vietnam is extra strong containing upwards of 6% oil). Decorate around the coconut manna with some bananas and around the edge of the plate with some sliced berries. Serve immediately!

These make a scrumptious dessert but without the extra fruit one of these pancakes with some sausage and bacon is an awesome weekend breakfast if you are not limiting your carbs in the AM!
