Ingredients:
8 oz. Coconut Cream (not from tetra pack as this contains guar gum as an added stabalizer)
4 table spoons Unsweetened Dried, Shredded Coconut
2 tea spoons Unsweetened Coco Powder
4 squares High Cacao (85% is ideal) Dark Chocolate
Sprig of Mint Leaves (as garnish)
Instructions: Does not get any easier than this for a great, truly Paleo holiday Dessert!
Total Prep Time: 7 minutes
1) Pre-chill your Coconut Cream in freezer for 30 minutes (not longer or else it will become too hard to work with)
2) Combine Coconut Cream, Unsweetened Dried, Shredded Coconut & Coco powder in either mixing bowl or blender (note: hand mixing usually works just fine, but for a slightly higher whipped consistency, use the blender on medium for 1.5 minutes)
3) Put into individual serving bowls & garnish with 1 square of Dark Chocolate & Mint Leaves
4) Optional: serve immediately or chill in freezer for an additional 5-10 minutes
