Paleo Beef Stew in slow cooker

Servings: 4

Ingredients: 1.5 lbs Beef stew cubes
2 medium sweet potatoes
1 medium onion
1 clove garlic minced
14 oz can low sodium diced tomatoes
1 cup frozen spinach

2 tbsp toasted sesame oil

1 tbsp basil
1 tsp oregano
1 tbsp italian seasoning (optional)
1 tsp thyme
1 tsp cilantro leaves
1/4 tsp chili powder
1 tsp sea salt
1 tsp ground pepper

Instructions: place beef in crock pot, coat with the oil. Mix seasoning in small bowl then sprinkle the mixture over the beef.
place cubed sweet potatoes and sliced onion and garlic on top of meat.
pour diced tomatoes on top of vegetables, then cover with spinach.
Cover and cook 6-8 hours on Low.

Notes: Seasonings can be very flexible according to your taste.

    Can you use regular (non frozen) spinich?

    This was a great recipe! I’ve made it a few times, and love how easy it is and how yummy it tastes. No dissolved sweet potatoes here.
