The Caribbean kitchen has always been one of the most attractive in the world to me. It is characterized by its bold combinations of spices which result in delicious flavors that are integrated perfectly with one another.
Jamaica has many native ingredients that are hard (if possible) to find in other countries like the Ackee (a fruit that looks and tastes like scrambled eggs when it cooks) or the Callaloo (similar to spinach). Quibombo (a caribbean form of Gumbo using the Okra seed) is an excellent example of how to bring together everything you can find and using the strong individual characteristics of spices, ginger, fish, fruits, seafood and vegetables unite them to create a hardy stew with flavors that many people never experience.
Jamaica it’s known for its Jamaican pepper or Allspice which comes from the Greater Antilles (Jamaica, Cuba and Hispaniola) and is made from the berry of the evergreen pimento tree, its’ flavor resembles cinnamon, nutmeg and cloves which is why it was named like this.
This recipe is a dry jerk rub used on pork chops. This rub is also tasty with chicken, fish and seafood.
Serves 3 adults or (2 adults and 2 kids)
Preparation time: 15-20 min
Ingredients:
- 3 pork chops
- Olive oil
- apple cider vinegar
For the jerk rub:
- 2 tsp chili powder
- 1 1/2 tsp allspice
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cayenne
- pinch of cloves
- 1 tbsp salt
- 1 tbsp onion powder
- 1 tbsp pepper
Quick fresh Salad:
- Mixed salad
- Arugula
- 2 tomatoes
- 1 Anaheim pepper
- Avocado (serve on salad or on the side)
For the vinaigrette:
- 1/2 cup Cold pressed olive oil
- 1 lime
- chopped garlic
- pepper to taste
Directions:
- Place pork chops in a casserole dish or any large bowl.
- Add oil and vinegar
- Add Jerk mix and rub pork chops untill well covered with oil/spice
- Let stand for 1 hour
- Grill pork chops until clear juices start coming out about 5 min on each side.
- Mix the desired quantity of greens in a bowl, chop http://www.consuelowerner.com/recetas/chuletas-de-puerco-a-la-parilla-estilo-jamaiquino and toss on top of salad. Pour vinaigrette before serving to avoid the salad to become soggy.
- We also grilled some delicious Italian Style Bratwurst from Wooly Pigs, although not strictly paleo we really enjoyed them.

I do miss good Jamaican food, ackee, curry, callalou, grilled breadfruit, jerk everything, yum. I’ll have to try this one out, I don’t bust out the grill near often enough.

Squatchy… the longer you let this rub to absorb in the meat the better it’ll get… perhaps leaving it overnight, I tend to do this often : )

I have been on the Paleo diet for 1 week and it has changed my life. I know this is a short time but i am not going back to anything else. I was diagnosed with Ulcerative Colitis 7 years ago (18th birthday actually) and within 13 months went from being normal to being on 21 pills of Prednisone a day, and Prednisone injections, all different types of meds, and nothing worked. Needless to say my large intestine took the blunt of it, i tried changing my diet but nothing seemed to work, and in the end after 13 months of battling i had my large intestine removed as there was nothing left of it.
I am now left with only my small intestine (J-pouch), and things have been ok. I try to eat healthy(or what i was told was healthy) and live an active lifestyle. this had been working for me, but the last few months of stessful work, not eating as healthy took a toll on me, and i ended up getting pouchitis (colitis of my J-pouch, on set to Crohn’s).
I seen the doctor who put me on meds, but i couldnt take the normal drug (flagil) as with my last flare up found i was allergic to it and reacted badly. With 2 weeks of high dose meds nothing worked and i was worse after the meds. This was three weeks ago.
I then took it upon myself to do research and get healthy on my own. i met with my friend in Calgary (Crossfit trainer) who led me to the Paleo diet and your website. I have now been on the diet for a week, my health has never been better, and i feel amazing, have energy, and am finally sleeping. I know this is only a week but its amazing how quickly it turned it around and how i can eat without pain.
I am getting the rest of my family on this diet and i will never go back!

Well Robb, I guess this would by my 30 day update. Let’s see, after the initial unbeleivable turnaround of my colitis (or pouchitis, as i dont have a largy intestine anymore) symptoms i was astonished at how this was possible. Since then i have never felt better, i am sleeping again, and have a ton of energy, started projects around the house i had been pushing off because i was too “busy” more like lazy.
I have rid my house of everything non-paleo, and also have my family on the “lifestyle”, i dont like to use diet as this is a way of life not just a diet change. They have had great results. I got them on Paleo because we all went on a week long camping trip so i voted that i would cook all week, Paleo style, and i wanted them to see how they felt after. My dad lost 14 pounds in those two weeks and he is amazed a how easy the weight is coming off. I have also lost 16 pounds during the first month and i felt i didn’t need to lose weight being 172 lbs and what i thought was quite fit, i am not very lean as i have not lost but gained muscle.
Thank you again for this information, you are a wealth of knowledge.
I’m looking forward to starting my volleyball, hockey, ball hockey, work out season from september to april to see how this knew boast of energy goes.

I held a Nutrition/Paleo Seminar for my clients this past weekend. Just and FYI, all we talk about is Robb’s book! I also provide an entire Paleo meal. This weekend I featured this recipe. OMG!! I made these for dinner last night. AWESOME!!! I set up the chops to “soak” in the morning before work so they sat in the spices all day, came home fired up the grill and had dinner on the table in less than 20mins. These were the BEST chops I have ever eaten. I cannot wait to try this combo on chicken, fish and beef and maybe turkey and…….thanks for sharing.
