Ingredients:
2 lbs. grass fed ground beef
1 lb. ground chicken or turkey
2 medium onions- diced
2 green bell peppers diced
2 jalepeno peppers-seeded and chopped
4 cloves garlic-minced
1 large can tomato sauce (check that you use one that is paleo and has no sugar)
El Pato is good but you’ll need several
small cans
2 cans diced tomatoes (check ingredients)
1 can diced green chiles
2 tbsp. chili powder
1 tbsp. chipotle powder
1 tbsp. garlic powder
1 tsp. cumin
1/2 tsp. cayenne (more or less to taste)
salt to taste
olive oil
fresh avocado slices or homemade guacamole) and lime
Instructions: Chop onion, green bell pepper, jalepeno, and garlic. Saute onion and green pepper until onion is translucent in olive oil. Add jalepeno and garlic to soften. Remove most of sauteed veggies and place into crock pot. Leave some in pan to cook with meat. Add meat to pan and brown. Add chili powder to meat while browning. While meat is browning, add sauce ingredients and remaining spices to slow cooker. Drain meat and add to slow cooker. Cook on low for 8 hrs. Serve with fresh avocado slices/homemade guacamole and some lime.
Notes: This makes a huge batch! You can tame down the chipotle and cayenne if there are kids in the crowd. My kids love this recipe as does my husband! They don’t miss the beans and we all feel better for it!
