Servings: 8-10 servings
Ingredients:
2 pounds extra lean ground beef
1 cup onion, finely chopped
1 cup celery, finely chopped
1 cup carrots, finely chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
2 (4-ounce) cans chopped green chilies
2 (14-ounce) cans diced tomatoes
2 teaspoons finely minced roasted garlic
1 (8-ounce) can tomato sauce
2 tablespoons chili powder
1 teaspoon ground cumin
1/4 teaspoon smoked paprika
1 teaspoon ground oregano
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon ground black pepper
Juice of 1 lime
1 cup water
Instructions: Combine all ingredients in a large cast-iron skillet or large saucepan. Bring to a boil. Place lid on skillet/pan, and lower heat. Simmer for 1 hour.
Notes: Can serve with chopped fresh cilantro or parsley.
