Servings: 6-8 depending on appetite
Ingredients: Cooked Rotisserie Chicken (plus salt, pepper, and vinegar for broth)

Faux’rn bread (my paleo version of cornbread) ingredients
1 1/4 cup almond flour
1/2 cup coconut flour
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic salt
1 1/2 tablespoon baking powder
fresh ground black pepper
4 tablespoons coconut milk
2 tablespoons melted ghee
4 eggs

1 head of cauliflower
5 long celery stalks sliced 1/2 inch thickness
1 large onion chopped
3 boiled eggs chopped
1 heaping teaspoon sage
1/2 teaspoon thyme
1/4 teaspoon rosemary
sea salt and black pepper
Instructions: Shred all meat from rotisserie chicken and set aside in large mixing bowl
Bring to a boil carcass, salt, pepper plus 2 tbs vinegar in 5 cups of water for broth, simmer on low 30-45 minutes
Preheat oven to 400
For Faux’rn bread:
Heat 9 inch cast iron skillet in 400 F oven for 7-8 minutes
Mix dry ingredients with fork (almond flour through black pepper)
Add wet ingredients (coconut milk through ghee)
Mix with hand blender on medium high until smooth
Pour batter into hot skillet and bake for 15 minutes
Chop cauliflower
Microwave in glass bowl with 1C water for 10 minutes stirring half way through
Add to large bowl with shredded chicken
While the cauliflower is cooking:
Saute celery and onions with 1C broth over meduim heat until tender
Add to large bowl with chicken and cauliflower
Add chopped boiled eggs to large bowl
Add sage, thyme, rosemary, salt, and pepper to chicken, veggie, and egg mixture
Reduce oven heat to 375 F
Pour chicken and spice mixture into 9X13 baking dish
Crumble 3/4 of faux’rn bread over the top
Evenly distribute 2 to 2 1/2 C broth
Gently combine the chicken/veggie/spice mixture with faux’rn bread and broth until its all moist
Bake uncovered for 30-35 minutes at 375 F until it looks nice and golden

This would have been good if the cornbread was not added. Unless I goofed, the cornbread got really mushy and ruined both the presentation and the texture. It also did not add any flavor. I will serve the cornbread separately next time as it tasted okay (not stellar though).
