Ingredients: 6 chicken breasts
1 tablespoon coconut oil
1/2 large red onion, sliced
12 ounces fresh cranberries
1 orange, juiced and cut into wedges
1/4-1/2 cup raw honey
2 cinnamon sticks
1/4 teaspoon ground ginger
1/4 teaspoon nutmeg
pinch ground cloves
Instructions: In a frying pan, heat coconut oil over medium heat. Brown chicken for 5 minutes per side and set aside.
In a 7 quart crock pot, stir together red onion, cranberries, orange juice, honey, cinnamon sticks, ginger, nutmeg, and cloves. Set the chicken breasts into the cranberry orange mixture and top with orange wedges. Cook for 6-7 hours on low or 4-5 hours on high.
