Banana-Apple pancakes. Kids love them!
Ingredients:
5 large ripe bananas (almost black)
3 eggs
1 tbsp cinnamon
4 tbs of coconut oil or butter (if you allow it in your diet)
Large skillet
Directions:
In a food processor or blender mix mashed bananas, cinnamon and eggs. Blend for about 1 min. Do not over mix.
In a hot skillet add 2 tbs of coconut oil or butter, let it melt and pour pancake mix. Flip pancakes when the edges start to brown.
This batch makes about 9 small 4 inch pancakes.
Serve hot with homemade applesauce on top. (If you don’t have time to make applesauce you can top them with some fresh cut fruit (apples, peaches, berries.)
Notes: Add an extra 1/2 cup of nut butter (walnut, almond, pecan) for more calories. You can also add a 1/2 tsp of vanilla extract for more flavor or 1/2 cup of shredded coconut for texture. Play around, be creative!

Pointing out useful tips makes it easier for people to find alternatives. I’m really trying to find ways for people who follow Paleo and live in other countries especially Latin America who don’t have the resources/or have a hard time getting coconut flour or some nuts. People with nut allergies should benefit from this as well : )

I actually also tried this recipe with canned sweet potato I had sitting around the house and it worked pretty well! I added a bunch of cinnamon to it. Yum!

We make these once a week usually and they ABSOLUTELY ROCK. Seriously taste better than normal buttermilk (read: unhealthy) pancakes. I usually go a little maple syrup and a scoop of organic full fat yoghurt and sprinkle with cinnamon – I know the yoghurt isn’t pure paleo, but it’s not bad now and then. Thing is you can eat a plate of these and they just go down so easily while a plate of normal pancakes would leave you writhing around with stomach bloating and wind pain no doubt.

Tasted good, but didn’t hold together very well. Kind of like bread pudding, sans the bread :/

Add an extra egg 🙂 You just need to get ‘quick’ at sliding the spatula under the pancake and flipping 🙂 The extra egg should hold it together more – and hey, an extra egg never hurt anyone!

Quick and easy- 1 banana, 1 egg, 1/2 tsp vanilla, 1 Tbsp almond butter (or more). Mash. Cook in coconut oil or butter. Double or triple as needed. or 1/2 banana, 1/2 small cooked sweet potato, or same amount apple sauce. Grab and go.

hm. partial fail in my own unscientific testing. I followed the recipe, but the pancakes collapsed under their own weight during the flip EVERY TIME, regardless of pan temp. or relative done-ness. I ended up with ‘collapsed accordion’ looking pancakes. Finally decided to just cook the rest of the batch all at once like a fritatta. Tasty, but definitely not a pancake. I was using a regular stainless pan – is that the failing point? does it need to be teflon?

As mentioned above, sometimes bananas are too large. You only need to use less bananas or add more eggs used as binding agent. You got to love chemistry!

What is the 411 regarding consumption of plantains, green bananas, yautia (malanga), batata (Latin American sweet potato), and yuca. Is there published material in this regard? Please advise.
