Coconut oil is one of my favorite fats to use in cooking. There are lots of posts out there that tell why, what it’s good for, and how you can use it, so we won’t rehash all that here. How they found it
In this interview Brian Shilhavy explains how he and his wife, Marianita, discovered Virgin Coconut Oil during the years they lived on Mt. Banahaw in the Philippines. They were the first ones to export Virgin Coconut Oil from the Philippines to the US. I can’t believe i have to pick ONE favorite use for it. Okay, i have to say i use it evenly with my olive oil however i tend to use only coconut oil when making eggs. Just signed up for the newsletter. Just 3 weeks into the paleo lifestyle and loving it. My favorite use of coconut oil so far is to get a few fillets of tilapia, a little sea salt and fresh ground pepper and a squeeze of lemon on both sides, throw some coconut oil in the pan and fry for 5 to 6 minutes on each side. Delicious! My wife likes to dredge a little egg wash and almond flour on her tilapia along with the same ibgredients above same cooking method over medium (6 on the burner turner) also delicious!

While we use coconut oil for cooking, I think our favorite use of it is as a moisturizer. We use it pretty much every day. I love the way that my wife smells after she has put it on her face before retiring for the night. I used it as sun protection when I went for a day long mountain hike this summer. Still got red, but not near as bad as my brother (who didn’t use it).

Coconut oil is my go to oil for sauteeing onions with or without kale. Also use it to sautee red/green cabbage with addition of garlic cloves as a side dish for beef/pork/chicken/salmon. Although it imparts no coconut flavor, the texture and consistency improve the recipe end result.
When shopping the other day, my check-out person was interested in the coconut oil I was purchasing. I was able to extol its virtues and explained how I used it for cooking and as a substitution for other oils in baking. Taking baby steps in the education of the masses!

Ingredients
* 1 cup Organic Coconut Oil
* 1/3 cup Unsweetened Organic Coconut Flakes
* 2/3 cup Macadamia Nuts
Sometimes I had unsweetened dried cherries, or unsweetened dried cranberries.
Directions
Mix together oil, coconut flakes and nuts. Line a pan or plate with parchment paper. Pour the oil mixture onto the parchment paper. Freeze for at least 30 minutes. Break apart into pieces of bark. Store in the freezer.

I use coconut oil for stir fry. It’s absolutely perfect. There’s no one recipe, but I tend to use cabbage + whatever vegetables I have on hand (if I’m lazy, a bag of frozen) and a healthy dose of meat. Add some asian hot sauce and I’m golden.

I’ve been a huge fan of coconut oil for years, and TT is where I got my first fix. (Too bad it wasn’t free…)

Favorite use? The one where it probably has the most impact is this: lightly steam some green beans, maybe half-way done, then transfer to a skillet, and sauté in coconut oil w/ red bell pepper. Toss in some slivered almonds right at the end, salt it up, and presto – best green beans you’ll ever eat.

I love Coconut oil. we use it for every basic cooking need, and for a fabulous hair conditioner and chapped lip balm as well. for the conditioner, put it on and wrap your head in an old pillowcase with a clothespin to hold it on. 1 hour, wash out.
Lip balm, put on at bedtime (no hanky panky – unless your into that sort of thing) and in the morning your cracked nasty lips are like new.
Oh, yeah, and did I mention that we cook/bake with it as well. Fried Bananas, anyone? (I like mine with a drop of vanilla, but that’s not necessary.)

My favorite thing to cook with coconut oil is Sweet Potato Fries
Crispy Sweet Potato Fries
* 1 large sweet potato, cut into steak fries
* 1 tablespoon coconut oil
* 1 tsp. cumin
* 1/2 tsp. sea salt
Pre-heat oven to 400°, place cut slices of sweet potato into a large bowl, top with the remaining ingredients and stir to coat evenly (I use my hands). Spread the fries onto a cookie sheet or baking pan (I use a Silpat for easy clean up) and make sure the fries aren’t crowded – they need space or else they start to steam and get soft rather than crispy. Bake for 15-20 minutes, take them out of the oven and flip, then bake for another 15-20 minutes. Keep an eye on them the last 5-10 minutes as some of the smaller pieces might start to burn.

Recipe: Work out hard. Shower. Apply coconut oil to those places prone to dryness!
Recipe:
2 mini 12 muffin pans
1/2 cup coconut flour
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. ground cloves
1/2 tsp. baking soda
1/2 tsp. salt(use if you want)
1/2 cup cooked, pureed pumpkin meat
6 eggs, beaten
4 1/2 tbsps. coconut oil
1/3 honey(I usually don’t use it, but it does make it easier for people who need their sugar fix)
1 tsp. vanilla extract
1/4 cup coarsely chopped brazil nuts
Preheat oven to 400 F.
Coconut flour, baking soda, salt, and spices go into one bowl(small). Mix well.
Place pumpkin puree in a medium to large bowl. Add eggs one by one, lightly mixing. Add coconut oil and vanilla and mix thoroughly.
Add the dry mixture to the wet mixture and mix to eliminate lumps. Be careful not to overdo the mixing. Mix in nuts.
Use normal table spoon to place in muffin pan. 1/2 to 2/3 full.
Bake 15-20 minutes or until semi-dark brown. When you are able to stick a tooth pic in and remove without stickiness, muffins are done!
Immediately remove from pan to prevent excess cooking(and burning!).

Favorite: 2 TBS coconut oil in wok and stir-fry a load of thinly sliced onions, bell pepper, and zucchini. Add 2 TBS roasted chili paste, 2 TBS Fish sauce, 1 handful of cashews, and 1 tsp brown sugar (obviously optional). Usually serve as a side with Chicken Coconut Soup, or add thinly sliced chicken (liberally dusted with Penzey’s Bangkok Blend) to stir-fry or some other large hunk of animal flesh.
Otherwise use coconut oil daily for all my cooking needs, add a little to coffee, or eat a little off of a spoon because it’s so damn good!!!

When I first started Paleo, I used EVOO for cooking, but found that most of my food either turned out too dry or too greasy. Since replacing all that EVOO with coconut oil, my meals are tastier and less-greasy! Love it. 🙂

My approach would be considered extreme by some, but it hasn’t killed me yet! I take a few drums of Tropical Traditions coconut oil and mainline it into my apartment’s plumbing system. Yes, this means I shower, bathe, and brush my teeth with coconut oil. All cooking is obviously done with coconut oil, except for in the rare instance where I might use coconut butter.
When I workout, I sweat coconut oil. When I slip and fall (coconut oil is slippery, what can I say) I bleed coconut oil. When I watch Seabiscuit, I cry coconut oil tears.
I had my blood tested recently, and the doc was pleasantly surprised. Very low cholesterol! Not a single type B LDL! Little did he know, his lab had actually measured the coconut oil that now courses through my veins in place of blood. I didn’t have the heart to tell him.

No-Bake Coconut cookie:
Melt 1T coconut oil just long enough to stir into liquid form
Add any combo of:
1T ground flaxseed, 1T almond meal, 1T shredded coconut, 1T chopped nuts
Plus: 1/4tsp vanilla and/or almond extract
Stir, the put onto parchment paper and Freeze about 5 minutes.
Makes 1 amazing cookie (** tastes JUST like the old Good Humor Toasted Almond bars, which I used to obsess over).

I love all things coconut, however, I was surprised when skimming the recently revised Paleo Diet that Dr. Cordain didn’t include coconut on his list of recommended oils. In fact, it seems like he barely touches on coconut at all and what he has to say isn’t favorable. What gives? Maybe this would be a better question for the podcast…

Yes, Robb, what IS the deal with Dr. Cordain’s stance on coconut oil? In his Preface to the Revised Edition of The Paleo DIet, Dr. Cordain says “… the only oil I believe should be used for cooking is olive oil.” (p. xii) His only mention of coconut is two paragraphs (p. 133) where he says it’s high in lauric acid, known to elevate cholesterol, but since the Pacific Islanders are okay, the we all should go ahead and enjoy it. A contradiction?

I know Dr. Cordain recently altered his stance on SFAs and updated part of the new edition of his book to reflect this. Upon skimming through it however, the update was a minor one, probably only to appease those who keep bugging him about his outdated opinion. He definitely didn’t go to any serious lengths to “promote” SFAs which leads me to believe that he’s still kind of stubborn about this issue, or at the very least, sees them as neutral.

The least processed is best, so look for: organic, virgin [no such thing as extra virgin], cold pressed.
Expeller pressed or centrifuge processed is cheaper, but involves higher temps, more processing, etc.
Refined is the cheapest, but save this for non-food uses only [has little if any coconut smell]

I boil green beans until slightly cooked and drain them. Heat coconut oil in a pain, add green beans and salt. Once covered in oil, and hot, add some unsweetened coconut flakes. Very tasty!

Coconut oil is great for eggs and veggies, but I also use it to make Coconut Macadamia Bark. Just melt the coconut oil, add shredded coconut and some crushed macadamias, and freeze. Delicious.

While not the best total meal, my favorite use of coconut oil includes the use of various fruits and nuts to make an awesome dessert-like food. This calls for typically a single apple and banana (chopped) plus a handful of blueberries. Added to this are a half a handful of walnuts, 1-2 tbsp of coconut oil, some shredded coconut, ~1 tbsp cocoa and some cinnamon. Mix it all together and you’re good to go. Any fruits can be used, yet bananas tend to be a catalyst that makes everything work well. Add in some protein and you’d have a halfway decent PWO meal, albeit perhaps a bit heavy on fructose.

I’ve been eating Paleo since the beginning of December and with the change in eating and working with a trainer I’ve lost 22lbs so far and am stronger and healthier than I’ve been since I was a teen. I’ve still got about 70lbs to go, but now it doesn’t seem like the impossible task it was a few months ago. I can’t believe how much better I feel!

“Lime in the Coconut” roasted Salmon and Veggies
I cooked this for a Paleo holiday feast. My parents had never heard of the Paleo concept. They were pleased with then results.
Preheat oven to 400F.
Slice and place the following in a baking dish:
1 small onion, sliced
2 c brussels sprouts, cleaned and halved
1/4 head each of purple and green cabbage, sliced
2 tbsp COCONUT OIL (not olive, not macadamia, not grapeseed; who ever heard of “lime in the olive oil!”? Ew!)
1/2 c lime juice, zest included (alternatively, you can use the juice and zest of a grapefruit in addition to the lime -it makes it a little but sweeter – and once it mixes with the purple cabbage, the sauce becomes a beautiful lavender-pink color!)
Braise in a 400F degree oven for 30 min.
While the veggies are braising, rinse and clean a 1 lb filet of wild caught salmon.
Rub filet with 1 tbsp coconut oil.
After vegetables have softened for 30 mins, place the salmon, skin side down, on top of the veggies.
Bake for an additional 10-12 mIns, depending on the thickness of the fish.
If you Really enjoy coconut oil, drizzle some with a pinch of sea salt on top before you eat this wonderful feast.
This recipe would probably be good if tequila were added to the braising liquid too… Just an idea.

My daughter, wife and I are finishing the Whole9Life 30 day challenge today. It has been exceptionally eye-opening for us. Everything that people say happens happened. We feel great, look better, and have changed our shopping and eating habits (the rest of the family has yet to buy in).
