Servings: 5-6 meal sized servings
Ingredients:
1/2 pound uncured organic bacon
1 pound ground lamb
1 pound lean ground sirloin
4 bell peppers(I like two red and two orange)
1 sweet yellow onion
3 sweet potatoes
16 ounces tomato sauce
16 ounces fire roasted tomatoes
3-6 jalapenos(depending on how spicy you want it[none of you can’t handle spiciness])
Tablespoon chili powder
Tablespoon cayenne pepper
Tablespoon garlic powder
Tablespoon onion powder
Tablespoon cumin powder
Tablespoon paprika
Tablespoon salt
Instructions: Cook sweet potatoes in oven until soft(about an hour at 400°F)
While potatoes cook dump tomato sauce, fire roasted tomatoes, and spices into a large pot. Simmer and stir occasionally.
Cook bacon in a pan until crispy, break into little 1“ or under pieces and add to pot. Save grease in pan.
Dice bell peppers, jalapenos and onion in the time between cooking meat and stirring.
Cook lamb in grease pan to a hamburger brown and add to pot broken down into chunks.
Do the same thing as the lamb to the sirloin.
Cook bell peppers, jalapenos and onions in grease pan until onions start to brown and add to pot.
Usually the sweet potatoes are done by now. If so remove skin, mash or break into chunks and add to pot.
Turn up the heat to medium/high for 20-30 minutes.
Eat
Notes: I like to double this recipe and move the finished product to a crockpot for easy warming and party serving. It fills my crockpot and I get to keep a serving that the party goers don’t know about.
