Ingredients:
3 sweet dried chilies like New Mexico seed and stems removed
1 Cascabel seeds and stem removed
3 Arbol seeds and stems removed
2 Chipoltles in can with 2 tablespoons goop from can
2 Anchos seeds and stems removed
2 Pasillas seeds and stems removed
2 quarts chicken broth
4 pounds beef chuck trimed of grissle, cut into 1/2″ chunks
3 slices thick bacon chopped into small chunks
1 large sweet onion (vadalia)
4 cloves garlic
1/2 tsp cinnamon
1 Tbsp cumin
1/4 tsp allspice
2 tsp oregano
1 Tbsp unsweetened cocoa
Instructions: Put all chilis in sauce pan with 1qt of chicken broth and simmer for 10 minuts. Blend it all together after it cools in blender.
Cook bacon in dutch oven, remove bacon chuncks, leave fat.
Saute meat to brown, remove from pan.
Add onions and cook for 2 mins, add garlic, cinnamon, cumin, allspice and oregano.
Put meat and bacon back in dutch oven.
Add chili puree and remaining qt of chicken broth to dutch oven.
Bring to boil and reduce heat to simmer for 3 hours.
Try to resist eating it!
Add cocoa.
Enjoy!
Notes: Real chili is made with… CHILI PEPPERS!
Everyone who has tried this raved, including my kids. It takes time to make this but it is totally worth it!
