Servings: 2 1/2 dozen
Ingredients: 4 1/2 C. Almond Flour/Meal
1 to 1 1/2 C. Dark Choc. Chips (depending on your chocolatey desires)
1 1/2 tsp. Baking Soda
3 Large Eggs
3/4 C. Pure Honey
3 1/4 tsp. Vanilla
1/4 C. Gluten Free Flour (Optional – see additional notes/comments)
Instructions: Heat oven to 350 degrees.
Grease/Spray cookie sheet. (I use a pizza stone w/no grease/spray).
Mix Almond Flour/Meal, Chocolate Chips, and Baking Soda together.
Add Eggs, Honey, and Vanila and mix well. If you choose to use the GF Flour, add it at this time and mix well. Dough should be moist, but not sticky.
Drop onto cookie sheet, using a teaspoon, making about 2″ diameter cookies.
Bake for 12-14 minutes.
Notes: I found that the GF Flour adds more density and flavor to the cookie, making it a better tasting cookie. If you are too sensitive to use it, you can omit it. Just add another 1/4 C. of Almond Flour/Meal and an additional 1/2 tsp. of Vanilla.
